Concept-to-operation thinking
Hidden Cove Tiki Hut
Broad support across nearly every operating component outside physical construction.
The restaurant needed the work to fit the concept.
Hidden Cove Tiki Hut was a new restaurant concept in Sayulita that needed more than menu ideas. Ownership needed help translating the concept into an operation: what to serve, how to present it, how orders would move through the system, how the team would be staffed, and how the restaurant would function after opening.
An opening is not a collection of independent projects. Menu design, POS architecture, staffing, pricing, prep, and service flow have to work as one operating system.
What Josh worked on.
- Developed the food menu around the concept and operating realities.
- Developed the cocktail menu and serviceable drink specifications.
- Designed the printed food and beverage menus.
- Implemented a new POS system from scratch.
- Assisted with staffing and opening readiness.
- Continues to provide advisory support when ownership has operating questions.

Opening support
Long-term owner trust
The same deliverable would have been wrong for every restaurant.
The value was in matching the work to the actual operating need - broad systems support for an opening, focused menu economics for a food program, or execution discipline for a compact concept.
